The question about being a chef and having it consume your life...so true....It's not as glamorous as it looks on Top Chef/Iron Chef etc.

Nice interview.
Food Truck as anti-fast-food statement. I like that.
Inevitable co-opting of the Food Truck format by Corporate Food Company of America, not so crazy about that idea.
I lived near Nutley, NJ for a while. It didn't affect my preferences in food, but they did manufacture Prozac there...hmmm...
