Especially cooked just above rare, but just under medium rare…melt in your mouth flavor-madness.

Nice recipe but this suggestion is preposterous. It’s like Julia Child’s last book where as a concession to modern times she proposed using a mixture of 2% milk and whole cream in several dishes. I’ll cut off the internet before I do that.

vegetarian daughter in town
so it is sublime black beans and yellow rice ....

1 pound mostly cooked black beans
1 sm yellow onion
1 tbsp minced garlic
2 bay leaves
1 hand full of chopped red pepper
1 hand full of chopped green pepper
1 hand full of whole or halved green olives with pimento
heavy handed pour of olive oil
salt and pepper to taste

in the oil
saute the garlic and onion and bay leaves until softening
toss in the peppers for just a minute with salt and pepper
pour in the beans and the olives
splash in some red wine vinegar to taste
splash in a little red wine too if you must just save a bottle to drink with the meal
I like a little budget tempranillo
and simmer until beans are done and all ingredients are sharing in the flavors

2 cups dry rice 4 cups water cheap bulk white rice is ok
for the rice rinse once
stir in a little olive oil to coat rice while heating it up
put in some yellow rice seasoning(a thread of saffron in you are wealthy or half a package of mix i like bijol ....
pour in the water bring to a boil then simmer until done

hot sauce optional
one small chopped tomato optional when cooking

no raw chopped onions to accompany this dish
maybe a chunk of rustic white bread with a dab of butter ....

for couples the raw onion will interfere with the giddy make out session that will surely occur an hour or so after this dish and the wine ....

Queso con queso

I make a really good spinach artichoke dip. I need to make it again before I post the recipe but it is filled with a ton of cream cheese and mozzarella…yum.
